This issue sees the launch of the Ethnic Food series of recipe features. Taking centrestage is Hainanese fare.
Admittedly only Hainanese chicken rice came to mind when I thought of Hainanese food. To my surprise, there is a lot more to Hainanese cuisine than good ol' chicken rice, and the dishes range from sweet to savoury to spicy. Some of the recipes featured are Sticky Rice in Whole Coconut, Hainanese Chicken Chop, White-cooked Duck, Braised Lamb with Bamboo Shoot, Mee Hailam, Salted Fish & Chicken/Pork Soup, Stir-fried Glass Noodles & Dried Lily Buds, and Sweet Potato/Yam Dumplings.
