Recipe Ingredient

  • Gnocchi
  • 500g Mashed potato
  • 25g Parmesan cheese, grated
  • 2 egg yolks
  • 125g plain flour
  • 1/4tsp ground nutmeg
  • 1/4tsp ground white pepper
  • 1/2tsp salt
  • Cheese sauce
  • 375ml water
  • 1 vegetable stock cube
  • 1/2tsp sugar
  • 1/4tsp pepper
  • 2tsp Italian herbs
  • 120g cashew nuts, toasted
  • 2tbsp palm oil
  • 1 onion, chopped
  • 2cloves garlic, chopped
  • 500g spinach, washed, blanched in salted water, then drained and chopped
  • 250ml whipping cream
  • 200g blue cheeese

Instructions

  1. Mix gnocchi ingredients to form a dough, then divide into four. Shape each piece into a long 1.5cm thick rope and cut into 2.5cm pieces.
  2. Shape each roll over the tines of a fork. Cook gnocchi in boiling salted water until they float.
  3. For cheese sauce, place the water, sugar, pepper, herbs and cashews in a food processor and blitz to a paste. Over medium heat, sauté onion and garlic in hot oil then add stock and bring to boil. Stir in the paste and remaining ingredients. Add to gnocchi and combine well.
