Pan Mee

Ingredients

pan mee (flat flour noodles); mix 150g flour with water and oil.
200g dried anchovies
100g chicken meat, diced
100g minced pork
100g vegetables (any leafy vegetable of your choice)
1.5 litres of water
3 chinese mushrooms
3 eggs
Shallot crisps
chilli (blended)

Seasoning:

Salt and sugar to taste
Dash of pepper
1/2 tsp light soy sauce

Garnishing:

Shallot crisps
ikan bilis

Method

Deep-fry anchovies.

Boil water, add ikan bilis.

Remove ikan bilis.

Add chicken and pork plus mushrooms in a sieve, cook for ten minutes.

Add eggs and vegetable and seasoning.

Add in noodle.

Served with a dash of sesame oil and garnishing.
