Next, was the main course.

Diners will have a choice of oven-roasted chicken supreme with fresh Asian vegetables, potato herbs or roasted black pepper au jus or baked Canadian cod steak atop a medley of vegetables, green peas puree and tomato beurre blanc.

Ahmad Zaidi said he stuffed mushroom mousse into the chicken.

“I used chicken meat and blended it with eggs, chunky mushrooms and whipped cream to make the mousse.

“I then topped it with pistachio crumble with herbs and spices,” he said.

He recommended that diners eat the parmesan cheese crisp crackers that accompanies the dish within 10 minutes.

The crisp added a tinge of saltiness to the dish and was very tasty.

The mashed potato that came with the dish was light and fluffy.

The sauce is served separately.

“I used fish stock, spices, whipped cream and butter for the sauce.

“I then top it with fresh dill oil,” said Ahmad Zaidi.

The green peas puree was smooth while the shimijii mushrooms were soft.

To finish, “Lovely Couple Chocolate Symphony” will be served as dessert.
