SHOULD you crave Sri Lankan food, then visit DoubleTree by Hilton Kuala Lumpur’s Makan Kitchen, which is currently serving this authentic cuisine until March 29.

Themed “Colours of Sri Lanka”, DoubleTree has invited two special guest chefs from Hilton Colombo Residence in Sri Lanka to showcase their unique creations that will tempt your taste buds.

With more than 25 years of experience in the cuisine, chef Ajith Hewa Bandula and chef Harsha Wijesinghe have whipped up traditional specialities, which include Fish Ambuthiyal, Sri Lankan Chicken Curry, Negombo Tempered Prawns, Sri Lankan Hoppers with Condiments, Vegetable Drumstick Soup, Hean Batha, Sri Lankan Curry Noodles and Mango Ambula, among others.

Both the chefs have used a variety of herbs and spices such as cardamoms, cinnamon, cloves, coriander, fenugreek, cumin seed and mustard, among others to create a difference between dishes.

According to chef Ajith, the Fish Ambuthiyal is Sri Lankan’s traditional sour fish curry. Tuna fish is used and goraka or asam keping is mixed in the curry paste, which gives the sour flavour and dark brown texture. Apart from that, chef Harsha said an adequate amount of lime juice is also added after that. I think this dish is an acquired taste.

Popular dish: Sri Lankan Hoppers are crispy and areal treat.

The Sri Lankan Chicken Curry is different from the ones prepared in our Indian restaurants, except that it looks more like chicken rendang than curry.

The Vegetable Drumstick Soup is aromatic, appetising and tasty. The nutritional value provided by drumstick is high and it is rich in fibre. I would definitely recommend this dish to diners.

Negombo Tempered Prawns is one of chef Harsha’s specialities and this dish looks similar to our locally prepared butter prawns except that it does not contain crunchy egg floss or grated coconut. This is a must try, as it is finger-licking good.

The Hean Batha or Sri Lankan brown rice with seeds is also a healthy and wholesome dish and is a good combination for curries.

Apart from that the Mango Ambula, which looks like mango pachadi, found in our local Indian restaurants is sour and filled with spices.

You would probably love the Sri Lankan Hoppers with Condiments. These are actually pancakes made of rice flour and coconut milk, and is eaten with palm sugar. Sri Lankans love to have this dish with egg for breakfast.

For those who love sweets, try the Curd and Treacle, which is made of buffalo milk yoghurt and syrup. There is also the Sri Lankan milk tophee – very sweet and I would not recommend this for those with diabetes.
