MALAY fine-dining restaurant, Enak Kuala Lumpur presented its new ala-carte menu recently to kickstart the new year.

Owner and menu director Sherena Razaly said the emphasis was still on using family recipes passed down from four generations.

“I learned from my mother the secrets and the art of sourcing the best ingredients to be used in the recipes,” she said, adding that most of the recipes were originally from her mother’s kampung which is Muar, Johor.

For the new menu, she has created improvised versions of popular Malay dishes such as Udang Bakar Serai (succulent grilled prawns marinated with lemongrass) and Pucuk Paku Cendawan Sisik (wild ferns cooked with wild forest mushrooms).

Thanks to Sherena’s grandmother’s recipe, lovers of Malay food will have the chance to taste the rare Pucuk Paku Cendawan Sisik dish.

The mushrooms and fern are sautéed together to perfection with onion and garlic, making it the star addition to the menu.

Udang Bakar Serai is a new fusion dish that makes its presence in the menu. The prawns have a touch of turmeric and are complemented by mango salsa with fresh coriander leaves and lime juice, all of which makes a tangy yet sweet combination that is hard to refuse.

The meat dishes like Daging Masak Kurma, Rendang Padang and Daging Hitam are also worth going for. Each has its own distinctive taste, all in one plate.

Any menu will not be complete without dessert.

One of the picks would be the traditional dessert wrap called Ketayap Mangga (mango crepes with grated coconut) with redefined taste and presentation.

The crepes are not sweet as the fresh mango slices have taken over the role to add natural sweetness to the dessert.

Some of the existing dishes that foodies can look forward to are the popular Ikan Asam Pedas which has a sour yet flavoursome taste and Enak KL’s signature dish, Botok-Botok.
