Abalone is considered a prized ingredient in Chinese cuisine and the highly sought-after delicacy is being celebrated at Zuan Yuan Chinese Restaurant in One World Hotel this month.

Executive Chinese chef Michael Chew Chee Peng has drawn up a special promotion where the delicacy is prepared in six different styles.

Priced between RM38++ and RM128++ per person, each dish is set to whet the appetite of abalone lovers.

Chew said he used canned abalone imported from Mexico as well as ji pin abalone from Japan.

“The Mexican abalone was chosen because they are large and thick.

“We braise them in a stock of old chicken, chicken bones, chicken feet and oyster sauce before using them in the dishes,” he said.

Double Boiled Abalone Soup with Dried Scallop and Black Chicken Soup (RM38++ per person) features the Japanese abalone in a flavourful soup that has been double-boiled for four hours.

Both abalone and black chicken are said to be nourishing, and the combination is a treat.

The next choice, Cold Sliced Mexican Abalone with Marinated Jelly Fish (RM108++ per person), has a Thai influence.

The abalone slices, served on a bed of salad, are best savoured with Thai sauce for spicy, sweet and sour flavours.

Braised Sliced Mexico Abalone with Turkey Ham, Mushroom and Season Vegetable (RM108++ per person) has an interesting presentation.

The abalone, turkey ham, mushrooms and carrots are sliced and arranged into the shape of a Chinese fan.

Drizzled with the sauce reduced from the stock used to braise the abalone, this dish is a hit on the taste buds.

Meanwhile, Braised Stuffed Mexican Aba-lone with Sea Cucumber in Abalone Sauce and Prawn Roe (RM118++ per person) is scented with the unique flavour of prawn roe.

“We toast the prawn roe gently in a heated wok to intensify its aroma, before drizzling it over the dish,” Chew said.

The other two choices available are Braised Sliced Mexican Abalone with Black Mushroom in Superior Oyster Sauce (RM108++ per person) and Braised Sliced Mexican Abalone with Sea Cucumber and Golden Bean Curd (RM128++ per person).

The Abalone Feast promotion, which is available for both lunch and dinner, ends on March 31.
