Acar Delight

Ingredients (A)
  1. Cut cucumbers lengthwise, then remove the soft centre. Cut into 3cm-long strips. Mix with a tablespoon of salt and leave aside for about an hour. Wrap the marinated cucumber slices with a piece of muslin and squeeze out excess liquid until dry. Leave aside to air-dry for 2-3 hours.
  2. Cut long beans and carrots into 3cm lengths, and the cabbage into 3cm-4cm squares. Halve the red chillies and remove the seeds.
  3. Bring ingredients (A) to a rapid boil and scald the vegetables separately and briefly. Drain well in a colander. Reserve liquid.
  4. Heat oil in a wok and fry combined ground spice ingredients until aromatic and oil rises. Adjust sugar and salt to taste. Dish out to cool, then stir in reserved vinegar.
  5. Mix in the vegetables. Toss well. Add garnishing before serving.
