Recipe Ingredient

  • 125 g butter
  • 155 g castor sugar
  • 1 small egg
  • ½ tsp vanilla essence
  • ½ tsp almond essence
  • 275 g plain flour
  • ¾ tsp bicarbonate of soda
  • ½ tsp salt
  • 75 g ground almonds
  • 1 egg white beaten
  • Some almonds slivers for decoration


  1. Line baking trays with greased baking paper.
  2. Sift flour and bicarbonate of soda into a mixing bowl and stir in salt and ground almonds to mix.
  3. Cream butter, sugar, egg and essences until light.
  4. Fold in the sifted dry ingredients and mix to form a dough.
  5. Roll teaspoonfuls of mixture into balls and place them on the prepared trays. Press down slightly to flatten with a meat mallet. Brush with egg white and decorate with almond slivers.
  6. Bake in a preheated 170°C oven for 15 minutes or until lightly golden and firm to the touch. Cool on wire racks before storing in airtight jars.
