Recipe Ingredient

  • 100g young ginger
  • 150ml good quality vinegar
  • 200ml water
  • 6 tbsp castor sugar
  • 1 tsp salt
  • A few drops of cochineal food colouring (red food colouring)

Instructions

  1. Skin ginger and slice through a fine grater until thin slices are obtained.
  2. Combine vinegar, water, sugar, salt and colouring in a saucepan.
  3. Bring to a boil. Add the ginger and continue to cook at a low simmering boil until the water is being reduced to about half the amount (about 35 minutes) and the colouring is absorbed by the ginger.
  4. Take the saucepan away and leave aside to cool completely before serving.
