Baked Ginger Chicken

  1. Combine marinade ingredients in a bowl. Place chicken thighs in a baking dish. Pour marinade over chicken. Mix well to coat.
  2. Cover dish with cling film wrap and leave to marinate in the refrigerator for several hours or, preferably, overnight. (Turn the chicken over once or twice.)
  3. Line a baking tray with aluminium foil and arrange the chicken on it. Pour remaining marinade over the chicken. Cover with another piece of aluminium foil.
  4. Bake in preheated oven at 200°C for 20 minutes.
  5. Remove the foil, turn the chicken over and bake for 10 minutes at 180°C.
  6. After 10 minutes, turn chicken to its original position and continue to bake for another 10 minutes.
  7. Serve immediately.
