- 100ml balsamic vinegar
- 100ml red wine vinegar
- 1½ tsp mustard
- 700ml olive oil
- Pinch of salt or to taste
- Dash of pepper
- 2 tbsp minced fresh parsley or tarragon
- Combine both types of vinegars and mustard in a bowl. Whisk in the olive oil gradu.
- Adjust the seasoning with salt and pepper to taste, then stir in parsley or tarragon.
