Recipe Ingredient

  • 3 bunches broccolini
  • 4 salmon fillets, approx 1/2lb each
  • For the sauce
  • 10 anchovies in oil, finely chopped
  • 1 sprig rosemary, leaves picked and chopped
  • extra virgin olive oil
  • juice and zest 1 lemon
  • lemon halves, to serve

Instructions

  1. Heat a BBQ over high heat.
  2. For the sauce: Combine all ingredients adding enough olive oil to give it a good oozy sauce consistency. Season with pepper and set aside.
  3. Bring a large saucepan of salted water to the boil. Cook broccolini for 3-4mins or until just tender. Drain and toss through about half of the dressing. Keep warm.
  4. Meanwhile, rub the salmon with olive oil and season well. BBQ for 3-4 minutes on each side or until cooked to your liking.
  5. Divide broccolini between the 4 plates. Top each with a piece of salmon and drizzle over remaining sauce.
