Braised Lamb

  1. Marinate lamb pieces with lime juice for 10 minutes. Rinse well then blanch in hot boiling water. Remove and rinse well. Marinate lamb with marinade (A) for several hours.
  2. Heat sesame oil and fry ginger until fragrant. Add marinated lamb. Fry for a while.
  3. Add star anise, chao guo and Szechuan peppercorns.
  4. Pour in water. Bring to a boil. Cover and braise for 1 1/2 hours or until meat is tender and gravy is reduced.
