- Soak peanuts overnight in the refrigerator. Remove and drain well then cook in a pot of boiling water for 30 minutes. Drain and put aside.
- Chop trotter into sizeable pieces. Rinse well then blanch in boiling water for 5-6 minutes. Drain well.
- Combine trotters, peanuts, red dates, garlic, sauce ingredients and water in a deep sauce pot. Bring to a boil, then cover and simmer for about an hour until the gravy is thick. Add Shao Hsing wine. Serve immediately.
