Recipe Ingredient

  • 25gm butter
  • 50gm onions
  • 50gm white leeks
  • 1 litre white stock
  • 400gm peeled Russet potatoes
  • 125ml cream
  • Salt & pepper
  • Chopped chives


  1. Melt the butter in a pan.
  2. Add the peeled and washed sliced onions and leeks. Cook for a few minutes.
  3. Add the stock, sliced potatoes and seasoning.
  4. Simmer for 30 minutes.
  5. Liquidise the soup in a blender till smooth.
  6. Return to a clean pan. Boil again. Adjust the seasoning.
  7. Add the cream. Garnish with finely chopped chives.
