Recipe Ingredient

  • 150g butter
  • 175g sugar
  • 2 tsp grated lemon rind
  • 1 egg
  • 3 tbsp lemon juice
  • Mix these ingredients together:
  • 150g self-raising flour
  • 150g flour
  • 50g desiccated coconut
  • 1 tsp cinnamon powder
  • 1 tsp mixed spice


  1. Cream butter and sugar. Add in lemon rind and egg and beat until light and fluffy. Add lemon juice and beat well. Fold in dry ingredients and mix well.
  2. Roll two teaspoons of dough into 5cm lengths then shape into crescents. Place crescents on greased baking trays. Brush lightly with beaten egg white and sprinkle with desiccated coconut.
  3. Bake at 170 ºC for 15 minutes or until golden brown. Leave to cool on a wire rack.
