Recipe Ingredient

  • (A):
  • 125g butter
  • 110g sugar
  • 2 eggs, lightly beaten
  • (B) Sifted:
  • 250g flour
  • 1 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 1/4 tsp salt
  • (C):
  • 1 tbsp lemon juice
  • 2 tbsp orange juice
  • 4 tbsp UHT milk
  • (D):
  • 1 tsp grated lemon rind
  • 1 tsp grated orange rind
  • Filling:
  • 1 tin Monarch lemon pie filling (sold in supermarkets)

Instructions

  1. Cream (A) until pale. Gradually beat in the eggs. Fold in dry ingredients (B). Mix in (C) and add (D). Do not over-mix the mixture.
  2. Spoon 2 tbsp mixture into greased muffin pans to slightly half full. Add 1 tsp lemon pie filling then top up with more mixture to three-quarters full.
  3. Bake in a hot oven at 200ºC for 20 to 25 minutes or until cooked through.
