Recipe Ingredient

  • 50g cooked chicken meat, shredded
  • 1/4 tsp pepper
  • 1/2 tsp chicken stock granules
  • 1/2 tsp salt
  • 160ml UHT milk
  • 2 eggs
  • 90g butter, melt
  • 25g chives, chop coarsely
  • 25g carrots, grate
  • Sift:
  • 100g plain flour
  • 150g self-raising flour
  • 1 tsp baking powder
  • 1/4 tsp bicarbonate of soda

Instructions

  1. Preheat oven to 180ºC. Lightly grease muffin pans or patty tins with corn oil. Combine the sifted ingredients with the pepper, chicken stock and salt.
  2. Beat the eggs lightly and mix in milk and melted butter. Pour into the flour mixture. Mix lightly but well, then add in chives, carrots and chicken meat.
  3. Spoon batter into prepared muffin pans until three-quarters full. Bake in preheated oven for 20 to 25 minutes or until well-risen.
