Recipe Ingredient

  • 350g plain flour
  • 2 tsp baking powder
  • 125g castor sugar
  • 75g pecans, toasted and chopped
  • 2 eggs
  • 125g melted butter
  • 250ml milk
  • 1 tsp vanilla essence
  • 1 Granny Smith apples, diced


  1. Grease a 12-hole muffin pan. Sift flour and baking powder into a bowl of an electric mixer and stir in sugar and pecan nuts.
  2. In a small bowl, mix the eggs, butter, milk and essence. Pour mixture into the dry ingredients and mix on medium speed for 10-20 seconds.
  3. Stir in apples to mix. Fill batter into the muffin pan and bake in preheated oven at 200°C for 25 minutes or until well-risen and lightly golden.
