Recipe Ingredient

  • Syrup
  • 150g soft brown sugar
  • 20g castor sugar
  • 90g butter
  • 150ml water
  • 200g raisins
  • 150g pitted dates, chopped
  • 100g dried apricots, chopped
  • Ingredients (A) - sifted together
  • 150g plain flour
  • 50g high protein flour
  • ½ tsp bicarbonate of soda
  • ½ tsp baking powder
  • ¼ tsp salt
  • 2 eggs
  • 180g whole almonds, skinned


  1. Line and grease a loaf tin.
  2. Combine both types of sugars, butter and water in a saucepan. Bring to a gentle boil to dissolve the sugars. Remove from the heat and add in all the fruits. Stir to mix well and set aside to cool.
  3. Add in the eggs and mix until well blended. Add sifted dry ingredients and stir well to combine.
  4. Pour mixture into prepared tin and arrange the almonds on top of the cake as desired. Bake in a preheated oven at 180°C for an hour or until cooked through when tested with a skewer.
