Clean pork, then pat-dry with paper kitchen towels. Rub both sides of pork with sugar, salt and pepper.
Heat olive oil in nonstick frying pan. Cook pork slices over medium-high heat for 1 minute each side or until golden and caramelised. Reduce heat and cook for 2-3 minutes each side or until cooked through.
Transfer pork to a serving plate and leave for 5-6 minutes. Serve with dressing.
To prepare balsamic dressing: Combine olive oil, balsamic vinegar and mustard in a screw-top jar. Add a pinch of salt and a dash of pepper.
