Recipe Ingredient

  • 1 small chicken (preferably black chicken), approx 600g
  • 150g black beans, washed and drained
  • 10g old ginger, smashed
  • 3 dried Chinese red dates, seeded
  • 1½ cups Chinese rice wine
  • 3/4 cup water
  • 2 tbsp sesame oil
  • Salt to taste


  1. Skin chicken and wash thoroughly then chop into 4 pieces.
  2. Heat sesame oil in a wok and fry ginger until fragrant.
  3. Add black beans and continue to fry for 2-3 minutes.
  4. Add chicken and fry until heated through.
  5. Dish out all the ingredients into a double-boiler and pour in the rice wine and water.
  6. Cover and double-boil for 2½-3 hours over gentle heat.
  7. Add salt to taste and serve hot.
