Recipe Ingredient

  • 300g dried spiral pasta
  • 400g chicken breast fillet, trimmed
  • 70g sun-dried tomatoes, chopped
  • 50g baby rocket
  • 1 clove garlic, crushed
  • 2 tbsp olive oil
  • ½ cup mayonnaise
  • 1 tbsp mustard
  • Salt, sugar and pepper to taste

Instructions

  1. Cook pasta in a large saucepan of boiling salted water, following packet instructions until al dente. Drain.
  2. Heat 1 tablespoon olive oil in a saucepan and fry chicken until cooked through.
  3. Remove and leave aside for 5-10 minutes. Shred the meat.
  4. Add remaining oil to the pan and add garlic. Fry briefly until aromatic.
  5. Dish out and mix with the pasta. Add shredded chicken to the pasta. Mix in sun-dried tomatoes.
  6. Combine mayonnaise with mustard.
  7. Add salt, sugar and pepper to taste. Add pasta and baby rocket.
  8. Toss to combine.
  9. Serve.
