- 20 red chillies
- 4 cloves garlic
- 100ml vinegar
- 20ml lime juice
- 23 tbsp water
- 50ml plum sauce
- 100g castor sugar or to taste
- 3/4 tsp salt or to taste
- Blend or process the chillies and garlic in an electric blender.
- Combine blended chillies, vinegar, lime juice, water, plum sauce, sugar and salt in a saucepan.
- Bring to the boil then simmer over a medium low heat for 510 minutes.
- Cool, then put into a clean dry jar or bottle.
