Recipe Ingredient

  • 20 red chillies
  • 4 cloves garlic
  • 100ml vinegar
  • 20ml lime juice
  • 2–3 tbsp water
  • 50ml plum sauce
  • 100g castor sugar or to taste
  • 3/4 tsp salt or to taste


  1. Blend or process the chillies and garlic in an electric blender.
  2. Combine blended chillies, vinegar, lime juice, water, plum sauce, sugar and salt in a saucepan.
  3. Bring to the boil then simmer over a medium low heat for 5–10 minutes.
  4. Cool, then put into a clean dry jar or bottle.
