Recipe Ingredient

  • 2 cups (16 fl oz) watermelon juice
  • 2 tablespoons chilli syrup
  • 2 tablespoons lime juice
  • Sprigs of fresh mint
  • Chilli Syrup:
  • 2 large red chillies
  • 1/2 cup (125g) sugar
  • 1/2 cup water

Instructions

  1. To make the chilli syrup, slit the chilli lengthwise and remove the seeds. Place the chilli, sugar and water in a small saucepan and bring to the boil. Reduce the heat and simmer for 5 minutes. Remove the chillies, cool the syrup and place in a jar or bottle. Store in the refrigerator until ready to use.
  2. Blend together the watermelon juice, chilli syrup and lime juice. Pour into glasses filled with ice, and garnish with sprigs of fresh mint.
