- 90g cold butter, diced
- 35g castor sugar
- 135g plain flour
- 1¼ tsp cocoa powder
- ½ tsp vanilla essence
- 1 egg yolk
- Sift flour and cocoa powder into a mixing bowl. Stir in castor sugar to mix.
- Rub butter into flour until mixture resembles fine breadcrumbs. Add essence and egg yolk. Knead lightly until a dough is formed.
- Wrap the dough with cling film and refrigerate for about 30 minutes until it is ready to be used.
