Recipe Ingredient

  • 250g zucchini
  • 300g ground beef
  • 100g Anchor Unsalted Butter
  • 50g onion, diced
  • 10g garlic
  • 100g tomato sauce
  • 3g dried oregano
  • 3g dried parsley
  • 5g tomato paste
  • 3g mustard
  • 3g chili powder
  • 150g Anchor Extra Yield Cooking Cream
  • 100g Anchor Mozzarella Shredded
  • 50g Anchor Colby & Cheddar


  1. Slice zucchini with a mandolin into thin strips. Rub with vegetable oil and roast at 180C for 5 minutes
  2. Cook the beef. In a pot, melt Anchor Unsalted Butter and saute diced onion and garlic
  3. Add in tomato sauce, dried oregano, dried parsley, tomato paste and mustard
  4. Cook for 5 to 8 minutes before adding in Anchor Extra Yield Cooking Cream
  5. Sprinkle in chili powder and mix well
  6. Take zucchini strip and spoon on 1 tablespoon of beef
  7. Roll it up and place in a heat-safe plate
  8. Make a few and arrange nicely
  9. Mix Anchor Shredded Mozzarella and Anchor Colby & Cheddar, and sprinkle over the zucchini rolls
  10. Bake in 210C oven for 10 minutes or until cheese is melted and nicely blistered
  11. Remove from oven and wait for 5 minutes before serving
