Recipe Ingredient

  • Chicken Marination:
  • 1kg boneless chicken thigh, bite size
  • 280g Fernleaf Natural Yogurt
  • 10g garlic, grated
  • 10g ginger, grated
  • 2g garam masala
  • 100g gochujang paste
  • 60g lime juice
  • 30g cooking oil
  • 10g salt
  • 2g turmeric powder
  • red coloring, optional (misc)
  • Skewer:
  • 1 nos, big yellow onion, chunk
  • To Serve:
  • 200g Anchor Extra Stretch+ Mozzarella
  • lime wedges (on the side)


    To prepare chicken:
  1. Cut chicken into bite size, season with some salt and set aside
  2. Mix marinade ingredients together then add the chicken to the marinade and marinate for at least 4 hours
  3. When ready, thread chicken follow by onion onto the bamboo skewers, repeat another 2 more pieces
  4. Grill the tandoori skewers for 3-4mins on each side until the meat is fully cooked. Baste and brush with some oil while grilling
  5. To prepare snow blanket:
  6. In a non stick pan, add Anchor Extra Stretch+ Mozzarella cheese and heat on medium heat
  7. When mozzarella starts to melt, stir until cheese combines and melted fully
  8. Immediately pour melted mozzarella over the chicken, garnish, and serve. Enjoy!
