Recipe Ingredient

  • 100g butter
  • 50g margarine
  • 125g sugar
  • 1 egg yolk
  • 4 tbsp orange juice
  • Grated rind from 1 orange
  • 1 egg white
  • Crushed, flaked almond pieces
  • Sift:
  • 200g flour
  • 100g self-raising flour
  • 1 tbsp corn flour
  • 1 tbsp rice flour


  1. Beat butter, margarine and sugar until creamy. Add in egg yolk and continue to beat till light. Stir in orange juice gradually, then mix in orange rind. Fold in sifted flours and mix well.
  2. Take a lump of dough the size of a small lime and roll it into a ball. Flatten it slightly and place on a greased baking tray. Brush lightly with egg white and sprinkle over with crushed almond flakes.
  3. Bake cookies in a preheated oven at 170 ºC for 18 to 20 minutes or until they are a light golden brown in colour. Leave to cool on a wire rack, then store in an airtight container.
