Recipe Ingredient

  • 200g cooked crabmeat, flaked
  • 5 large eggs
  • 1/2 tsp sugar
  • 1/2 tsp salt
  • Pepper to taste
  • 1/2 tsp sesame oil
  • 2 tsp light soy sauce
  • 4-5 tbsp oil
  • 3 dried Chinese mushrooms, soaked and shredded
  • 2 stalks spring onion, chopped (use only the white portion)

Instructions

  1. Break eggs into a bowl and add salt, sugar, pepper, light soy sauce and sesame oil. Whisk lightly with a fork until well combined. Mix in cooked crabmeat.
  2. Heat a flat pan with a little oil and stir-fry mushrooms briefly for about a minute. Pour in egg and crabmeat mixture and stir-fry for 2-3 minutes. (Take care not to overcook the omelette.) Add a little extra oil to the pan if necessary, then break up the omelette with a spatula or a pair of chopsticks.
  3. Dish out the omelette on a plate lined with lettuce leaves and garnish with chopped spring onion. Serve immediately.
