Cranberry Oat Cookies

Another festive season is upon us and this time, we celebrate Christmas and the new year. If you are looking for cookies to prepare as gifts, these items will make good fillings for your cookie jars.

Instructions
  1. Beat butter, sugar, essence and egg yolk until creamy and light. Sift plain flour and bicarbonate of soda together and add to the butter mixture with the rolled oats. Mix until well incorporated.
  2. Add cranberries and mix into a dough. Remove small portions of dough and place in between two plastic sheets.
  3. Roll out to 3-4mm thick. Cut out with a round fluted cutter.
  4. Space out the cut dough onto a greased baking tray. Bake at 170°C for 20-25 minutes or until golden.
