- Mix sausage mince, salt and chopped parsley well.
- Remove shells from eggs.
- Cover the eggs with sausage mince retaining egg shape.
- Lightly dust with flour.
- Cover in beaten egg.
- Toss in bread crumbs and refrigerate to firm.
- Fry for around five minutes in hot oil.
- Drain on paper towel.
- Cut each in halves lengthwise.
- Top with a dob of sweet chili sauce and a sprig of parsley.
