Heat 2 tablespoons oil in a nonstick saucepan. Fry ingredients (A) for 1-2 minutes over medium low heat until fragrant.
Add minced meat and prawns. Stir-fry well.
Add mushrooms and continue to fry for a while. Stir in onion and carrot to mix.
Add ingredients (B), then toss and fry well. Dish out and add crab meat to mix.
Trim off hard edges of bread. Put 1-2 tablespoons filling on a slice of bread. Top up with another slice. Press down to hold the filling.
Hold the sandwiched bread slices firmly well together and dip thoroughly into the beaten egg. Heat enough oil in a wok until just hot. Gently release the sandwich bread into the hot oil. Deep-fry until golden brown. Do this in batches for easy handling.
