Recipe Ingredient

  • 12 pieces okra
  • Juice of half a lemon
  • Some ground black pepper
  • Batter :
  • 100g corn flour
  • 100g plain flour
  • 3/4 tsp baking powder
  • 1/8 tsp pepper
  • 1/2 tsp salt
  • 1 tsp oil
  • Enough water
  • Dipping sauce
  • 2 tbsp chilli sauce
  • 1 1/2 tbsp tomato sauce
  • 1 tsp lime juice
  • 1/2 tsp sugar
  • Salt to taste

Instructions

  1. Slice okra into half lengthways. Add a sprinkling of lemon juice and some ground black pepper.
  2. Combine batter ingredients in a mixing bowl.
  3. Add just enough water to form a smooth batter.
  4. Dip okra into batter and deep-fry in hot oil until crispy. Drip some batter over the okra when it is being deep-fried (this will create more crispy crumbs).
  5. Dish out okra and drain and serve with dipping sauce.
  6. Combine ingredients for the dipping sauce together and set aside.
