  • 400g fresh good quality durian flesh
  • 280ml whipping cream

Instructions

  1. Put durian flesh in a food processor. Blend until fine.
  2. Whisk the cream in a well-chilled bowl until it is stiff, then fold in the fine durian pulp to mix.
  3. Use the cream immediately.
