Recipe Ingredient

  • 175g margarine
  • 85g wholemeal flour, sifted
  • 145g plain flour
  • 3¼ tsp baking powder
  • 1½ tbsp milk powder
  • 145g castor sugar
  • 160ml soya bean milk
  • 150g mixed fruits
  • 1/2 tsp vanilla essence

Instructions

  1. Sift wholemeal flour, flour, milk powder and baking powder together. Return husks to the bowl. Cream margarine, vanilla essence and sugar until light and creamy.
  2. Add sifted ingredients, alternating with soya bean milk. Stir in mixed fruits to combine.
  3. Line patty tins with paper cup cases and fill the cases up to three-quarters full with the cake mixture.
  4. Bake in preheated oven at 200°C for 15–20 minutes or until cooked through.
