- 170g butter
- 220g castor sugar
- 3/4 tsp salt
- 500g water
- 450g superfine flour
- 1 tbsp baking powder
- 1 tsp vanilla essence
- Line and grease a 23cm cake pan and preheat oven at 180°C.
- Place butter, sugar, salt and water in a deep saucepan. Bring to a gentle boil until sugar is dissolved. Remove and leave to cool completely.
- Add vanilla essence to mix, then sift in flour and baking powder.
- Stir to mix into a batter. Transfer batter into prepared pan and bake for 35-40 minutes or until cake is done.
