Recipe Ingredient

  • 250g squid rings, fresh or frozen
  • 1 tbsp onion paste
  • 1/4 tsp garlic paste
  • 1/4 tsp ginger paste
  • 1/4 tsp turmeric powder
  • 1/4 tsp cumin powder
  • 1/4 tsp fennel powder
  • 1/2 tsp coriander powder
  • 1/2 tsp chilli powder (add more if desired)
  • 1 tbsp chickpea flour
  • A pinch of fenugreek powder
  • 4 tbsp lemon juice
  • 4 tbsp yogurt
  • 1 sprig curry leaves, finely sliced
  • oil for frying
  • 1 cup plain flour for dredging (optional)

Instructions

  1. In a deep bowl or dish, add squid, onions, ginger, garlic, spice powders, flour, curry leaves, lemon juice, yogurt and salt.
  2. Mix them throughly till the squid is well coated and let it marinate for at least 1 hour or more if possible.
  3. Heat oil and empty flour onto a tray and lightly dredge the squid lightly taking care not to overcoat the squid.
  4. Drop the squid into the oil and fry them till crispy. Fry only a few at a time to cook evenly.
  5. Garnish and serve them hot.
  6. Note: You can also opt not to dredge the squid in flour and fry them immediately after marinating them.
