Recipe Ingredient

  • 10 pieces fresh scallops
  • (A):
  • 1/2 tsp grated ginger
  • 1 tsp oyster sauce
  • 1 tsp chicken stock
  • 1 tsp Chinese wine
  • 1 tsp sugar
  • 2 stalks spring onion, cut into 2cm lengths

Instructions

  1. Remove any dark veins from the scallops but leave the red roe attached.
  2. Combine (A) and marinate the scallops in the mixture. Cover with cling film wrap and refrigerate for 20-30 minutes.
  3. Put the scallops back into their shells. Arrange the scallops in shells on a bamboo steamer. Spread a piece of cut spring onion over the scallops. Steam them over rapid boiling water for 3-5 minutes. Remove and serve immediately.
