Recipe Ingredient

  • 1kg fish bones
  • 100g onion, diced
  • 50g carrot, diced
  • 40g leek, diced
  • 40g celery, diced
  • 1 bay leaf
  • 5g white peppercorns
  • 5g garlic, crushed
  • 5g fresh basil
  • 5g fresh dill
  • 2.5g fresh thyme
  • 2.5g fresh tarragon
  • 20g lemon wedge
  • 80ml white wine
  • 5l water


  1. Wash the fish bones. Place all the ingredients in a pot. Bring to the boil and simmer for 45 minutes. Remove and strain. Reserve for later use.
