This is as Sarawakian raw fish salad.
- 1kg fish fillet, preferably red snapper, cut into sliced pieces
- Juice of 15 lime (limau kasturi)
- 1/3 tsp sugar
- 1 tsp salt
- A pinch of white pepper, crushed
- B (finely chopped
- 12 red chillies
- 2 stalk of lemongrass
- 3 cloves garlic
- 5 shallots
- 2in ginger
- 3 tomatoes,diced
- Marinate the fish with lime juice for 10 minutes or more. Keep aside.
- Chop finely ingredient B. Don´t over-chop the chillies.
- Put ingredient B in a bowl with the marinated fish and toss well.
- Garnish with tomatoes over the umai.
