Recipe Description

This is as Sarawakian raw fish salad.

Recipe Ingredient

  • A
  • 1kg fish fillet, preferably red snapper, cut into sliced pieces
  • Juice of 15 lime (limau kasturi)
  • 1/3 tsp sugar
  • 1 tsp salt
  • A pinch of white pepper, crushed
  • B (finely chopped)
  • 12 red chillies
  • 2 stalk of lemongrass
  • 3 cloves garlic
  • 5 shallots
  • 2in ginger
  • Garnishing
  • 3 tomatoes,diced

Instructions

  1. Marinate the fish with lime juice for 10 minutes or more. Keep aside.
  2. Chop finely ingredient B. Don´t over-chop the chillies.
  3. Put ingredient B in a bowl with the marinated fish and toss well.
  4. Garnish with tomatoes over the umai.
