Slice off pork skin and trim the excess fat. Cut meat into cubes. Marinate with seasoning ingredients for at least 3-4 hours or preferably overnight in the refrigerator. Deep-fry marinated pork in hot oil over medium-low heat until meat is cooked. Dish out and leave on several pieces of crushed kitchen paper towels.
Combine the sauce ingredients in a non-stick saucepan. Simmer gently for a while.
Return pork to the saucepan and cook with the sauce. Simmer until sauce turns syrupy and thick. Sprinkle in combined groundnuts and sesame seeds. Toss well.
