Recipe Ingredient

  • 315g long grain rice, washed
  • 1 tbsp margarine
  • 2 tbsp oil
  • 3 cloves garlic, crushed
  • 3 shallots, coarsely chopped
  • 1 lemon grass, bruised
  • 2 ½ cups water
  • 3/4 tsp turmeric powder
  • 1 ½ tsp ground cumin
  • 5 cloves
  • 3 cardamoms
  • 2 sprigs curry leaves
  • 1 tsp salt or to taste

Instructions

  1. Heat margarine and oil in a saucepan, add in shallots, garlic, cloves, cardamoms, lemon grass and curry leaves. Fry until fragrant. Add turmeric powder and ground cumin to the mixture.
  2. Pour in water and bring to boil. Stir in rice and salt. Cook over high heat for 4–5 minutes then lower the heat and cook covered slightly until rice is done and fluffy. Fluff the rice after it is cooked.
