Recipe Description

Chef Rram’s crispy and flavourful Fried Kandar Chicken is a required item for most Nasi Kandar enthusiasts.

Chef Rram Kumar is the Indian speciality chef at The Resort Café, Sunway Resort Hotel & Spa.

Recipe Ingredient

  • 3kg chicken, cut into pieces
  • 50g ginger juice
  • 100g shallot juice
  • 50g fennel seed
  • 30g curry leaves
  • 150g green chillies, chopped
  • 3 eggs
  • 60g turmeric powder
  • 30g red chilli powder
  • 50g meat curry powder
  • 300g corn flour
  • 150g rice flour
  • few drops red colouring
  • 2.5ml cooking oilfor deep-frying

Instructions

  1. In a mixing bowl, add all the above items and mix well. Keep for 3-4 hours or overnight in the fridge. Take out from fridge and leave it out at least 30 minutes before deep-frying.
