Fried Mutton in Fragrant Sauce
Fried Mutton in Fragrant Sauce is quick and easy. That’s what you want after a day of fasting
Slice mutton thinly. Mix with the marinade and set aside for at least 2-3 hours.
Heat 2 tablespoons oil in a saucepan on high heat. When hot, pan-fry marinated mutton for 1-2 minutes. Dish out and set aside.
In a clean, deep saucepan, heat 1 tablespoon oil on medium heat and sauté garlic until fragrant. Add the sauce ingredients and bring to a boil.
Put in the prefried mutton and simmer for 15 minutes, until gravy is reduced.
Add the ginger and onion to the mutton and fry briskly to combine. Simmer for 2-3 minutes.
Add in the chillies, toss and fry well, then dish out, garnish, and serve.
