- 4 red chillies, cut into pieces
- 4 cloves garlic
- 3 bird´s eye chillies
- 5-6 tbsp apple cider vinegar
- 1 tbsp fish sauce
- 3 tbsp freshly squeezed lime juice
- 2-3 tbsp sugar
- Put red chillies, bird´s eye chillies and garlic in a food processor. Squeeze in lime juice and process to required consistency.
- Place into a small bowl. Stir in apple cider vinegar, fish sauce, sugar and salt to taste. Pour into a serving bowl. Use as an accompaniment for blanched cockles or steamed crabs.
