- 1 litre water
- 4cm knob old ginger, smashed
- 4 tea bags
- Honey to taste
- 2-3 slices lemon
- Bring water and ginger to a boil. Reduce the heat and simmer for 10 minutes.
- Turn off the heat and add the tea bags and steep for 2 minutes to infuse the tea. Discard the ginger and add honey to taste.
- Serve the ginger tea with the lemon slices.
