Recipe Ingredient

  • 4 bird´s eye chillies (cili padi)
  • 2 fresh green chillies, halved and seeded
  • 3 shallots
  • 4 cloves garlic
  • 1/4 tsp finely sliced limau purut rind or zest
  • 1/2 tsp chopped coriander root (yin sai root)
  • 1/2 tsp finely sliced galangal
  • 1/2 tbsp sliced lemon grass (use the white portion only)
  • 1/4 tsp coriander powder
  • 1/4 tsp ground white pepper
  • 1/2 tsp belacan stock granules
  • 1/2 tbsp fish sauce
  • 1/2 tbsp sugar

Instructions

  1. To prepare the green curry paste, combine all ingredients in a food processor. Process until smooth. Chill the mixture in a clean glass jar.
