- 3 eggs
- 3-4 sprigs of spring onions
- 3-4 sprigs of coriander
- a pinch of salt and pepper
- oil for frying
- Break all 3 eggs into bowl and lightly beat. Add salt and pepper.
- Chopped spring onions and coriander.
- Heat oil in pan, put in chopped spring onions and coriander. Stir fry for a minute
- Then pour in beaten eggs.
- Allow omellete to set or when edges turn brown, turn egg over.
- Take it out from heat once done. Best eaten with bread or rice. Goes well with noodles too.
